Cacao Chocolate No-Bake Fudge Cookies
Rich, Dark Chocolate No-bake fudge cookies in no time!! 2 cups Oat Flour 1/2 cup organic Light Brown Sugar 1/2 cup organic Cane Sugar 1/2 cup raw Cacao Powder 1/2 stick of Butter 2 tablespoons of local, organic Honey 1 tablespoon fresh ground Flax Seed 1/2 cup Almond Milk (additional splashes for blending)
I have altered this recipe a bit to make it easier for the masses. In my true Ayurvedic version, I use homemade ghee in place of the butter and jaggery in place of the sugar. I realize those items may not be easily accessible for everyone, but if they are, go ahead and replace! I grind the flax seed in my coffee grinder, but you may purchase it already ground. Just be sure it is not the whole seed, as the body has a hard time digesting them. The ground seeds give us the Omega 3s we need! Combine the flour, brown sugar, ground flax seed and honey in your blender or food processor let stand or give a couple whirls to blend just a bit.
In a small saucepan, combine the butter, almond milk and white sugar. Heat slowly as it melts, combines and allows the sugar to dissolve, stirring constantly. Don't walk away from this one :)
Once smooth and melted, add to blender.
Blend all ingredients, adding splashes of almond milk if needed.
Once fully blended and smooth, use a small scoop or spoon to form medium-sized scoops. Place on a parchment covered tray.
Place tray in the refrigerator for 30 minutes to cool and set. After these set, they have a fudge-like quality.
You may also spread the 'dough' into a 8x8 pan and cut into squares. Enjoy!
